![Yo-Yo Cookies]()
Old-fashioned recipes are sometimes the best. These are called Yo-yo cookies, also known as Melting Moments, and they are custard flavoured bites of heaven. I’ve added a strawberry filling to give them some extra sweetness, but passionfruit filling is another great way to eat these, as well as just plain ol’ vanilla.

Ingredients
Cookies
- 125 grams (4.4oz) unsalted butter, softened
- 1/4 cup icing (powdered) sugar
- 3/4 cup all-purpose flour
- 1/3 cup custard powder
Filling
- 75 grams (2.6oz) unsalted butter, softened
- 150 grams (5oz) icing (powdered) sugar
- 2 drops Lorann strawberry extract
- pink gel food color
Instructions
Cookies
- Preheat oven to 160°C/ 320°F Line 2 cookie sheets with baking paper.
- In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth.
- Add the icing sugar, flour and custard powder and stir with a wooden spoon.
- Using your hands, roll a small amount of the dough into balls the size of a teaspoon.
- Place the balls 4cm (1 1/2 inches) apart on the lined trays. With fork dusted in icing sugar push the top of each cookie to flatten slightly.
- Bake in preheated oven, swapping trays halfway through cooking, for 15 minutes or until just cooked through. Remove from oven and set aside for 30 minutes to cool.
Filling
- In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the icing sugar, one cup at a time, until well combined. Gradually add strawberry extract and food color until combined.
- Spread or pipe the filling over the flat side of half the biscuits and sandwich together with remaining biscuits.
