Pink Velvet Watermelon cake!
Summer for us means beach days, birthdays, and fresh fruits, especially watermelons! Both my daughters were born in December, so the holiday season is extra hectic for us. This year we opted for a small celebration since last year’s was so over the top. So I made a little cake for us to share.
Sydney decided that she cared more about flavour than looks, so I made her favourite, red velvet cake. This time though, I omitted the cocoa powder and red food colour, and went for a pretty pink. The cocoa is really just there to cover up the taste of red food dye, so you don’t really need it when you are going for a softer shade.
Now I say that it was all about the taste, but hey, if your Mum’s a cake decorator, there’s no way you are getting just a simple cake. I’ve been wanting to make another cutesy cake for a while now, and I’m totally obsessed with watermelon designed cakes. Every time I see a new one, I have to share it. They are just so cute though!
Even though we didn’t do a big party this year, turning double digits is a really big deal. Syd was both excited and sad, because growing up as the youngest sometimes means you don’t want to grow up at all. And I agree, being an adult is overrated. Give me a watermelon birthday cake any day.

• 8″ round pink velvet cake – no cocoa added, and 1 tsp pink liquid food colour and a touch of Americolor Electric Pink gel
