Nothing Beats a White Chocolate Raspberry Bundt Cake!
This bundt cake recipe might just be your new favourite cake. I’ve been making white chocolate raspberry mud cakes for well over 10 years. They are dense, rich, so full of flavour and moisture, and since they barely need any frosting, I thought it would make the perfect new bundt cake recipe. There’s a super cool place that makes sweet looking cakes called Nothing Bundt Cakes, and I’ve been itching since I discovered them to try to create my own version of their simple but gorgeous cakes. Let me tell you, it may not have fancy piping or lots of colourful frosting, but everyone that saw this cake thought it looked so delicious and so pretty, they couldn’t help but cut themselves a monster slice!
The main tweak I did with my version was using frozen whole raspberries instead of a swirl. I just love the look and taste of whole berries, and while I normally say fresh is best, the moisture and intensity of flavour you get from frozen definitely creates a better cake in my opinion. This white chocolate and raspberry bundt cake also has my favourite frosting, white chocolate buttercream. Oh my! It is heavenly. It’s just my Sweet Buttercream recipe with a dollop or two of white chocolate ganache, but it is probably one of my most used flavours because it’s so smooth and creamy. Even my oldest who doesn’t like white chocolate devours this in record time!
This cake took all of ten minutes to decorate with a simple Wilton #1A piping tip and half a dozen fresh roses I picked up at Aldi. Gosh I love that place! I’m a total sucker for their knock-off Magnums and those Smores inspired Knopper snacks, well let me just tell you, those things are seriously addictive!
I hope you guys give this recipe a go. I know mud cakes are a very Australian thing, and they do have a unique type of batter. It’s almost like when you make a melted butter and real chocolate dense fudgy brownie recipe. Just like with brownies, it doesn’t need a mixer, which makes also me do a little happy dance. Less dishes for me!
