Beautiful Buttercream Tulip Cake With Russian Piping Tips

Get out those Russian piping tips, and let’s get cake decorating!

These piping tips might just be my new best friend. Piping this tulip cake was a piece of cake, pardon the pun, thanks to these fantastic tips! This is not my first tulip cake, in fact I made a video making larger tulips on a cake years ago. Problem was, they didn’t actually look all that great. At least not to me anyway. Aren’t we always our worst critic?!

So it’s been on my re-do list. Yes, I have a list of cakes I’ve made before, but I want to do again. I want to try again, and see if I can do a better job. It’s tough though making cakes, because sometimes it can be years between orders for the same cake, or you can have a run where you make the same design 10 times. I can remember when we did weddings, there was a week where we did three of my rose cakes all at the same time. Different flavours and different colours. It was so scary trying to keep them all straight and not muck them up!

This cake also uses a leaf tip that I rarely use as well, plus lots of variegated colours. Lots of variety in the colours for these leaves and flowers make all the difference in the world. Don’t bail on me and do one dimensional colour, you’ll regret it! Even a simple cake like this needs some serious attention to detail, and I am so glad I did, even though it made the whole thing take way longer. Some choices are worth it.

I’ve listed all the materials below for you guys to follow along. I measure out all the frosting and colours so you don’t have to guess. If you haven’t used these tips before just realise they do take a fair bit of frosting since the flowers they make are a decent size. Materials

• four 8″ round sponge cakes
• buttercream ( http://cake.style/2016/03/01/sweet-buttercream/ )

  • 500g (1lb 3oz) light green – 1kg pink (1lb 1oz) – Sugarflair Pink, once cake is filled and iced, add more pink into 200g (7oz) for flower centres
  • 500g (1lb 3oz) light green – Americolour Mint and Avocado, for crumb coat and leaves
  • 200g (7oz) darker green – Americolour Mint and Avocado (don’t fully mix in the colour) for leaves
  • 150g (5oz) white – Americolor Whitener for leaves

• 9″ round cake plate
• angled spatula and scraper
• Large Russian tulip piping tip
• piping tips – Wilton #1A for filling and #70 for leaves
• piping bags
• cling wrap
• scissors
